Bite Size Crustless Quiche

Ingredients:

  • 2 tbsp butter

  • 1 cup chopped red and/or green pepper

  • 1/2 cup chopped green onion

  • 6 large eggs

  • 1/4 cup milk

  • 1/2 cup grated cheese

  • 1/2 tsp salt

  • 1/2 tsp black pepper

Steps:

  1. Melt Butter, sauté peppers and onions till soft. 

  2. Let sauté mixture cool.

  3. Combine eggs, milk, cheese etc.  Stir in sautéed peppers and onions.  

  4. Spoon about 1 tbsp mixture into mini muffin tins.

  5. Bake at 425 °F for 20 min.

  6. Cool for 1 minute, then loosen with knife and remove.

Makes 36-44 quiche.
